Whilst we were out at Oceanside we caught up with Pro Athlete Joe Gambles and he cooked us up a delicious Vegan French Toast dish! We also discussed his life as a vegan athlete, what he eats during the season, what he gets out from his diet and where others might be going wrong! Recipe: 320 ml Coconut cream Plant Based protein powder (optional) 2 Bananas Tsp Cinnamon Sourdough Bread Frozen berries, add water and simmer for 25 mins/until reduced to make berry compote. Melt plant based butter to pan. Bread is dipped, coated and fried in the batter. Berry compote on top of the bread. Add Maple Syrup and Almonds.
